Mama Lander’s Lasagna
Brenda Lander’s nerd famous lasagna has graced many a Rogue’s Gallery event. Randy brought over his mom’s lasagna to Vinnie and I when Xander was first born. After we realized we’d eaten it all I asked Mama Lander for the recipe and if I could share it. Behold!
Mama Lander’s Nerd Famous Lasagna
1 ½ pound ground beef
1 clove garlic, minced
1 T. sweet basil
1 ½ tsp. Salt
1 pound can tomatoes, cut up
12 oz. Can tomato paste
8 wide lasagna noodles, cooked
3 1/3 c. low fat cottage cheese
2 eggs, beaten
1 tsp. Salt
½ tsp. Pepper
2 T. parsley flakes
½ c. parmesan cheese (grated)
1 lb. Low fat mozzarella cheese, shredded
Preparation:
Brown the meat. Drain off any fat.
When meat is browned add the minced garlic, basil, salt ,tomatoes, and tomato paste. Simmer uncovered until sauce is thick, about 30 minutes.
While the sauce is thickening, cook the noodles.
Combine the cottage cheese, eggs, seasonings, and parmesan cheese.
Assembly:
Place 4 noodles in a 13 x 9” pan. Spread half the cheese mixture over the noodles and sprinkle half the mozzarella cheese over top. Cover with half the meat. Repeat again, the noodles, cheese mixture, mozzarella, ending with other half the meat.
Cooking:
Bake 350 degrees for 40 minutes.
Let stand for 10 minutes before cutting into 12 servings to serve.
